I prefer using Booking.com or Hotelscombined but there are many sites for booking NYC hotels. All the big sites (Expedia, hotels.com, Agoda, Hotels Tonight) are legit and can have good deals. Not sure if that helps.

For Santorini, there is an added wrinkle in that almost all of the best views are provided by hotels. Very few Airbnb rentals have a great caldera view and most are back from the cliff with no view or views to the east (not the caldera).
